Oysters are a unique food - truly natures food parcel and can keep fresh in their shell for several days.
For the health conscience they are perfect. They are 99% fat free, high in omega-3's, zinc, iron and other vitamins and minerals. They also contain less than 0.03% cholesterol.

Serving oysters is simple and yet impressive. Some of the easiest ways is just to look in your pantry and place some commercial sauces on top eg. sweet chilli, bake in an oven for 8 - 10 minutes and serve on a bed of rock salt with green garnish on top.

I prefer to bake in preference to grilling oysters to avoid over cooking and ensuring the oysters stay plump and full in the shell. On natural oysters, a touch of red wine vinegar or lemon juice and ground pepper is all that is needed.

Try some fish sauce, lime juice, touch of mirin, fine brown sugar, small chopped chilli and thinly sliced shallot for that Asian touch. Another option is to remove the oyster from the shell, roll in some spiced flour and gently fry in some butter in a pan .
